Trainees

Scarf trainees are resilient young people seeking protection and those from refugee and migrant backgrounds who are facing barriers to work. Many have experienced long-term unemployment and for most trainees, Scarf is their first taste of paid employment in Australia. During Scarf Dinners, trainees are supported by mentors as they grow their skills, knowledge and experience running the front-of-house, whilst professional chefs do the cooking.

A recent graduate said:

Scarf gave me a genuine safe space to learn, grow and feel connected.

The young people working front-of-house during these Pop-Up dinners are trainees in the Spring Scarf '25 10-week Seasonal Program, and will be paid the Restaurant Industry Award wage for their work during this event and other work experience shifts worked at partner venues during the program.

Restaurant Partner
Molli is the newest venue from The Mulberry Group, who have been supporting Scarf as a venue partner since 2011. At these pop-up dinners, $60 per person covers a generous set menu (shared starters, choice for main course) from the experienced Molli kitchen, and invaluable opportunities for the Spring Scarf '25 trainees who'll gain paid work experience.

Please note, whilst this is a set menu, most dietary requirements (including Vegetarian, Vegan, Nut-free, Dairy-free and Gluten-free) can be accommodated. Please make a note when you book your table, or reach out to [email protected] to chat through your needs.

Drinks

As always, we'll have a fantastic drinks list (including non-alc options) thanks to our wonderful Scarf Partners. Expect beverages from Unico Zelo, NON, Stomping Ground, Starward, Archie Rose Distilling Co, Maidenii, Marionette, Bathtub Gin Co, Campari and Daylesford & Hepburn Mineral Springs Co.

For Spring Scarf '25, we're planning something extra special with the cocktail offering! Legendary Scarf Graduate Kimiya (Autumn Scarf '24) is co-designing the cocktail menu with Scarf's Training & Events Manager, Nele. After graduating in 2024, Kimiya moved into a job at Boilermaker House, and she currently works full-time in the restaurant bar at Atria (The Ritz-Carlton). Learn more in this Graduate Q&A with Kimiya.

The cocktail list is themed A Day in Melbourne and features six special sips! Expect creations like The Big Smoke (a classic Martini all about Mount Zero, the gin will be fat-washed with smoked olive oil, mixed with dry sherry and garnished with rosemary and native pepper olives) and The Green Light (a spritz made for a picnic in the park - gin, green apple, elderflower & sorrel). Maybe you'll finish the night with The Last Tram Home, an indulgent old-fashioned (we've infused our favourite whisky, Starward Two-Fold, with toasted coconut and cacao nib for this cheeky little number!)

What to expect

By attending a Scarf Dinner, you’re making a real difference to the lives of young people who have faced barriers to work. Professionals do the cooking and Scarf trainees and mentors take care of the front-of-house. Expect delicious food, a top-notch drinks list, attentive service, a fun and buzzy atmosphere and the opportunity to provide valuable feedback as the trainees build their skills and confidence.

A regular diner recently told us:

At Scarf Dinners, there's nothing but good vibes and respect in the room.
