The Scarf Team

Hannah Brennan OAM

Co-founder and CEO

Hannah is a hospitality professional, Typsy mentor, Swinburne Multimedia (Media Studies) graduate and occasional freelance writer with a soft spot for limericks. Before starting Scarf, she worked in restaurants, bars and events for 10 years, meeting lots of talented and inspiring workmates and mentors along the way. After volunteering with the refugee community in Fitzroy, including editing The Social Studio's *bespoken, a newspaper providing a voice to marginalised members of the community, Hannah co-founded Scarf with Jess Moran in 2010. Hannah was a mentor in Scarf’s early programs, and looked after marketing and communications for three years, before becoming General Manager in 2013 and then CEO in 2020. She firmly believes in the power of social enterprise to allow young people to gain the skills, confidence and connections needed to break into employment. Hannah's role sees her focussing on partnerships, funding, evaluation and communications to help Scarf become as impactful and sustainable as possible. She also spends a bit of time gently reminding people that Scarf is not an acronym! In our case, it’s just a warm, comforting show of support and an expression of culture.

Outside of work, Hannah enjoys spending time with her wife Tara and daughter Maggie, checking out cool playgrounds and parks, listening to podcasts and attempting to cook delicious meals without using every pot, pan and utensil in the kitchen.

Lauren Stokes

Projects Manager (Team Lead)

Stepping into the workforce over 20 years ago, Lauren firmly believes hospitality is not just a job, but a part of who she is. Starting out slinging popcorn and ice creams at the local cinema, working her way through restaurants, cafés and pubs, Lauren found her niche in the Specialty Coffee industry. She jumped at every chance to learn something new, moving beyond her role as a barista to explore roles in customer service, sales, importing, logistics, operations and training. Lauren’s position as the Victorian Training Manager at Five Senses Coffee was instrumental in creating a connection with Scarf in early 2021, and she continued to volunteer beyond her role at Five Senses until officially joining the Scarf Management team in mid-2022, in a newly created leadership role - Projects and Pathways Manager. While leading the Scarf team and day-to-day operations, Lauren has helped the organisation return to regular programs and Scarf Events after the disruptions of the pandemic. She's also been keenly focussed on maximising new trainee opportunities while strengthening our work experience program with partner venues. 

As the hospitality industry reignites, Lauren believes it is an amazing time of opportunity for Scarf to engage with Scarf Partner venues and other potential future employers, to share the incredible skills of our graduates and create strong and supported pathways for equitable employment. When she's not at work, you’ll find Lauren sharing a pastry or exploring a new park with her toddler Gus, enjoying delicious food and wine with friends, taking family road trips to the beach and always drinking coffee! Travel has always been a massive part of Lauren and her partner's life and she’s most excited about introducing Gus to new places, people and cuisines.

Neil Baxendale

Program and Wellbeing Manager

Neil’s first job was in a family owned hotel in a seaside town in the North of England, and since then he’s worked in cafes, breweries and plenty of pubs (including supervising an East London pub during the 2012 Olympics, which he reckons was equal parts exhilarating and exhausting). Not content to just play the hospo game, Neil has also facilitated programs which helped young people in prison change their behaviours and lead more positive lives. After gaining a Diploma in Criminal Justice Studies, Neil worked as a Probation Officer in the UK, and then in Australia as a support worker for an outreach program, enabling adults to reintegrate into society after leaving prison. Neil was a volunteer restaurant mentor during Scarf seasons in 2014 and 2016 (and a keen diner during other seasons) and in August 2018 we were thrilled to welcome Neil to the team.

The Program and Wellbeing Manager role sees Neil wearing a number of hats at Scarf (and he really, really loves a hat, as we discovered during our 2020 Zoom workshops!) Neil plays a crucial role in recruiting and then supporting trainees through our 10-week Seasonal Programs so they can reach their goals, and helps to make sure that all Scarf staff and volunteers are working within our Trauma Informed, Resilience Building framework which prioritises trainees' safety and wellbeing. Neil's also responsible for co-creating and delivering our Skill Up with Scarf and Tasting Plate short courses, running job readiness group workshops and one-on-one sessions with Scarf graduates as they transition from the program to ongoing employment. After a long development period, Neil launched our Graduate Voice advisory group in early 2023, which he co-facilitates with Scarf graduate Mel. Neil connects with others in the community sector to share ideas and resources and ensure that Scarf is part of a sector-wide approach to breaking down employment barriers for people from asylum seeker and refugee backgrounds. And when any potential employers come knocking, Neil is always keen to chat to them about connecting Scarf graduates with jobs. Neil prides himself on fostering trainees’ strengths, building their confidence and providing really practical support with resumes, job hunting and job applications, interview skills and the like, in order to make employment more equitable for our talented, resilient and motivated graduates.

Nele Stubben

Training and Event Manager

Nele’s first foray into not-for-profits was in high school, when she volunteered at the cafe in her local community centre in Hamburg. The hospitality seed was well and truly sown! Whilst studying political science at university, she began working in bars and eventually “fell head over heels in love with cocktails” just as the craft cocktail movement was beginning in Germany. Moving to Australia to be with her husband in 2018, Nele’s employment has spanned some of Melbourne’s best hospitality ventures, including Speakeasy Group (National Training Manager), Farmer’s Daughters (Bar Manager) and most recently, Made in the Shade Group (Venue Manager, Bar Margaux).

Currently working as a freelance hospitality trainer and consultant, Nele prides herself on supporting her clients as they navigate the huge shifts in the hospitality industry post-Covid. Beyond hospitality, Nele has a firm interest in Diversity, Equity and Inclusion; she wrote her masters thesis on Social Enterprise, and completed a Mental Health First Aid Course in 2022 in order to better support her staff. In her spare time, she loves reading, hanging with her two cats, strolling along the Merri Creek and heading into Melbourne’s CBD to check out art exhibitions and have a bite to eat (and a cocktail, of course!) at one of Melbourne’s many amazing restaurants. 

Joining Scarf as a Volunteer Mentor in 2019, Nele has assisted with lots of training sessions and events since. In early 2023, she stepped into the team to manage Scarf Events, bringing tons of knowledge, passion and warm leadership to inspire Scarf trainees to take their first steps into Melbourne hospitality. In early 2024, Nele's role grew to include a significant expansion of the Scarf Training program, recruitment and management of volunteer mentors and trainers, and event planning. Nele is also a key connector between Scarf and partner venues, supporting trainees and graduates to undertake paid work experience and preparing to transition from Scarf into the hospitality industry.

Rebecca Stobbe

Operational and Communications Support

From one coffee-hooked city to another, Rebecca's rainy Seattle roots played a huge role in her love for a cosy, community cafe. Holding over ten years of barista-ing and hospitality experience, Rebecca has come to cherish the flexibility and collaborative nature that hospo work offers. After receiving a degree in Environmental Studies, Rebecca went on to work in the sustainability space, gaining project management and communications experience with other local social enterprises and charities, all while splitting her time in the cafe and as a musician.

Although she is often overwhelmed by the many problems to solve in this day and age, Rebecca is passionate about creating change and innovation in her day-to-day work, drawing her to organisations that practice what they preach and prioritise empathy and impact. So it's not surprising that her journey has led her to join the Scarf team in mid-2025. In this new role, Rebecca will be working with the team across events, programs, fundraising campaigns (and everything in between) to ensure we can continue growing trainee opportunities and social impact! When she's not found crafting up your morning latte, you can find Rebecca performing at your local music venue, scavenging the streets' op shops, or attempting to salvage the veggies in her backyard garden.

Mel Watson 

Graduate Voice Chair

Mel's broad employment has spanned hospitality, superannuation and community services and since 2021 she's worked as a Fund Administrator in a financial services company. She's also a proud board member of Hope Co-Op, supporting young people from asylum-seeking backgrounds as they complete their education and move into sustainable employment. Mel is a music lover and talented singer, having performed at festivals and two major Scarf events - our 10th and 13th birthday celebrations! When she's not working or singing, Mel loves keeping fit at the gym, catching up with friends, and driving out of the city once a month to get amongst nature. 
 
Mel first connected with Scarf in 2016 when she became a trainee in the Winter Scarf 10-week Seasonal Program at Higher Ground. With a keen interest in hospitality and a natural talent for customer service, Mel proceeded to land three hospitality jobs within a couple of months of graduating! After working in hospitality for a couple of years, Mel returned to study and gained a Diploma of Business before moving into finance. 
 
After engaging in paid event work with Scarf over many years, in 2022 we recruited Mel to be the Chair of Graduate Voice. This important role sees Mel contributing to the organisation's strategy and co-leading the Graduate Voice group as they problem-solve and share ideas, ensuring future programs are valuable and culturally safe for trainees.

Mel Ross

Volunteer Donation Support 

Mel has been volunteering for Scarf since 2015, supporting with bookings, donation receipts and running Do More Than Dine fundraising events. She loves helping others and giving back to the community. After living in Melbourne for 23 years, she moved back to Adelaide with her family at the end of 2021. Currently, she's loving exploring all the new food and wine options in Adelaide, festivals and events and being no more than 20 minutes from anywhere! In a world where you can now work from anywhere, she loves that she can still volunteer for Scarf, even though she’s in a different state.
